February 6th - Dinner

Although this was not what I actually had for dinner, it is something I prepared tonight and will be enjoying for a couple of days!

It's an egg and potato salad with a good helping of cilantro!!

Ingredients:

10 eggs boiled, peeled, chopped
6 medium potatoes cubed
2 handfuls of cilantro chopped
1 tablespoon Mayo
3 tablespoons of sour cream
Black pepper
Paprika
Salt-to taste and boil the potatoes in

I boil, peel, and chop the eggs. I cut six potatoes into little cubes and boil them with a little salt until cooked through but still firm; otherwise, if the potato is cooked through and then some, it just becomes egg and mashed potato salad! Eww!!

Now back to my salad!

After the potatoes are done, I drain all the excess liquid and combine the eggs and potato in a large bowl. It's important that absolutely no stirring is done until all the ingredients are in the bowl. It prevents the salad from becoming mush!

So, in goes eggs, potatoes, two handfuls of chopped cilantro, a tablespoon of mayo, three tablespoons of sour cream, a hearty pinch of black pepper and a slight pinch of paprika.

Now, once all of the ingredients are in the bowl, gently mix, almost like you would fold cake batter! Once everything is mixed, taste it. This is the point you can decide whether to add salt. Since mayo is slightly salty and the potatoes were boiled in salt, I don't add additional salt until the very end if needed! Nine times out of ten, it won't need it!!

And there you have it!! Egg and potato salad!! Enjoy as a sandwich, on a cracker, or just by itself! It pairs well with ripened tomatoes and provolone cheese!!!
