February 8th - Sun

I took this picture at work this morning! The big window is directly behind me when I sit at my desk! The sun making its debut through the blinds warms my back and acts as a natural heating unit. As a kid, I would love to nap when the sun would warm up the sheets through a window and keep me nice and warm acting as a blanket!

February 7th - Button

Tonight I sit next to the husband as he works on emails and reports!!!! I can hear the clicking of the keyboard buttons. Click click click!!!!

February 6th - Dinner

Although this was not what I actually had for dinner, it is something I prepared tonight and will be enjoying for a couple of days!

It's an egg and potato salad with a good helping of cilantro!!

Ingredients:

10 eggs boiled, peeled, chopped
6 medium potatoes cubed
2 handfuls of cilantro chopped
1 tablespoon Mayo
3 tablespoons of sour cream
Black pepper
Paprika
Salt-to taste and boil the potatoes in

I boil, peel, and chop the eggs. I cut six potatoes into little cubes and boil them with a little salt until cooked through but still firm; otherwise, if the potato is cooked through and then some, it just becomes egg and mashed potato salad! Eww!!

Now back to my salad!

After the potatoes are done, I drain all the excess liquid and combine the eggs and potato in a large bowl. It's important that absolutely no stirring is done until all the ingredients are in the bowl. It prevents the salad from becoming mush!

So, in goes eggs, potatoes, two handfuls of chopped cilantro, a tablespoon of mayo, three tablespoons of sour cream, a hearty pinch of black pepper and a slight pinch of paprika.

Now, once all of the ingredients are in the bowl, gently mix, almost like you would fold cake batter! Once everything is mixed, taste it. This is the point you can decide whether to add salt. Since mayo is slightly salty and the potatoes were boiled in salt, I don't add additional salt until the very end if needed! Nine times out of ten, it won't need it!!

And there you have it!! Egg and potato salad!! Enjoy as a sandwich, on a cracker, or just by itself! It pairs well with ripened tomatoes and provolone cheese!!!

February 5th - 10:00 am

10:00 am came and went for me today! At around that time, I was dragging myself to the kitchen to make a nice hot cup of coffee! As the hot water hits the coffee and the aroma begins to fill the room, I slowly begin to wake up!

But then I waited til 10:00 pm thinking I can be clever and take a picture and write up an interesting tale. That time came and went too. I was preoccupied with deciding on what to watch through netflixs! I ended up watching nothing and instead reading through a few blog posts from other bloggers!

And so, I find myself here and I'm left with 10:27 pm. I decided to say heck with it and take the picture! This day's photo challenge was difficult for me! Maybe tomorrow will be a tad bit gentler on me!

February 4th - Stranger

Today's photo challenge was the most difficult for me. I felt so violating taking a picture of a stranger! Poor guy! All he wanted was a hot cup of coffee and what he got was the coffee and his mug shot! Sorry Mr. Ihavenoideayouaretakingapictureofme sir!!!

February 3rd - Hands

The hands that love, hold, work, caress, feel, hurt, pull, push, and give high fives!! I realize I have a photo of my left hand but I promise I have a right one as well, in case you were wondering why I wrote 'hands' in the first sentence instead of hand.

While I realize that not everyone has the ability to use both their hands, I am thankful that I can do the above things I wrote about and some with the two that I have now.

February 2nd - Words

This is my Target store list. If I don't make a list of all the things I really need around the house, I will end up walking from aisle to aisle buying unnecessary things in unnecessary quantity! Heck, who am I kidding. I still walk aisle to aisle at Target!!!
